Ruby Tuesday Copy Cat

I know it isn't what you expect around here, but I'm actually sharing a recipe this morning.  What's more, there won't even be a Lucy ending. I made it without any hiccups, and it tasted really good, too. That's why I'm sharing.

Well that, and I can't think of anything else interesting to share right now.

We stopped for lunch at Ruby Tuesday a few weeks ago, and I ordered their mashed cauliflower as a low carb option to mashed potatoes. Have you ever had one of those moments in a restaurant where you just keep exclaiming over the taste of a dish? Well, this was one of them.

I've had them two times since then, too. Since I'm too cheap to keep going out to eat, I decided to google and see if anyone had copycatted them. They had. 

Now, we actually like our vegetables pretty plain around here. Generally speaking, we either use the grill or the steamer. I don't enjoy cooking enough to go to a lot of trouble. This recipe was no trouble at all.


Ruby Tuesday Creamy Mashed Cauliflower

Steam one head cauliflower until tender (The recipe calls for 15-20 minutes. Since I wanted mashed cauliflower and not mushed cauliflower, I did mine for 10 minutes.)
Cool.
Puree pieces with 1/2 c. water until smooth, leaving a few tiny pieces for texture.
Heat in a medium saucepan with:

1T cornstarch in 1/4 c. water
1 t. sugar (I used Splenda)
1/3 c. whipping cream (I used half and half)
1/2 t. salt (I didn't use this much and really don't think it's necessary with all the other stuff)
1/4 t. white pepper*
1/8 t. onion powder
1/8 t. garlic powder

Cook about 10 more minutes, stirring often.

That's it. The husband doesn't even love cauliflower that much and still thought it was delicious.  According to him, it didn't rise to the level of a mashed potato, but it stood well on its own. I thought they tasted nearly identical to the Ruby Tuesday version. *My only complaint was that they were a tad hotter. The next time I make them, I'll reduce the amount of white pepper.

And that's it. No leftovers. Just a happy camper singing Good-Bye Ruby Tuesday. In my head, I sound just like Mick Jagger.

Debbie, this is so funny to me because awhile back I, too, chose the mashed cauliflower at Ruby Tuesdays as an alternative to trying-not-to-go-there (delicious) mashed potatoes -- and I loved it! (Have had it a couple of times since myself.) I even tried it at home but, unlike you, I didn't look online for an already-tested recipe ... and mine lacked a little. Now that I see the full list of ingredients, I know why. I happen to be glad you shared this today, and I will try it again.

Ah! You almost make me want to go out and buy some cauliflower. Can't though - it's on my "don't do it" list with cabbage and avocado - not a pretty picture in the aftermath of taste-bud heaven.

However - if I can stand the green - maybe do this to achieve a creamed broccoli? Perhaps - creamed carrots? Sounds like experiment time in my kitchen with my "to do" foods.

Thanks...I have been meaning to put more cauliflower in our diet, and this would be so much better than the potatoes my husband always wants, but the doctors don't want him to have.

Of course, yours looks great on your place setting.

I am so glad you posted this recipe. I bought a head of cauliflower yesterday so I could try it. Now my only problem is how to puree. My blender is broken and I don't own a food processor. I guess I could sneak over to the newlywed niece's cottage and borrow hers. This recipe sounds so delicious, I can't wait to give it a try. I'll be sure to let you know how it turns out.

I love cauliflower. Never tried it mashed, but sounds fab. The best soup I've ever had was cauliflower soup from a Los Angeles hotel where I was staying. To die for.

This sounds really good. I love cauliflower and this creamy version sounds awesome! I will be trying out this recipe on my family when I return home. I don't think the kids here are to fond of the white stuff.

We don't have a Ruby Tuesday's, so I was unaware of the mashed cauliflower phenomena! I was never a cauliflower fan, but a friend once brought a whole cauliflower microwaved (steamed) with cheese to a potluck that changed my mind. I might just have to try your recipe, too! I love your sense of humor and way with words!

My husband makes a version of this, but I will share this recipe with him. He also makes a fab mock mac and cheese using cauliflower instead of macaroni since we've been eating low-carb.

Oh, how I love me some mashed potatoes. they are my crack! MMMM! I don't like cauliflower by itself, however, I have combined mashed cauliflower in WITH my mashed potatoes to lower the calories. It was surprisingly delicious. I'm such a picky eater. No wonder my butt is the size of a barn.

well aren't you clever! I'm not a fan of cauliflower, but this gives it a new look. My mom used to steam a whole head of it and drizzle sauteed cracker crumbs in butter over the top, with steamed carrots and green beans piled on the sides. I went for the carrots and the drizzle!

However... I may have to give this one a try...

This must be a sign...I never buy cauliflower but recently heard about using it as a sub for mashed potatoes and thought it sounded like something I'd like to try. So now that you've given me the recipe I have no excuses. Cauliflower, here I come!!!

Oh, Debbie, this is a definite must-try recipe! I love mashed potatoes, but I don't like all the starch associated with them. I don't mind cauliflower, so I think this will be quite delicious.

Even weirder than the fact that we both posted copykat recipes when we don't post about food is the fact that I have some cauliflower in my fridge right now (a rare occurrence) and that I ate at Ruby Tuesdays for lunch today. Parallel lives much? ;)

Well, aren't you smart - googling to get a copy cat recipe. I bet that is good, and it really doesn't sound difficult. For me to go get some at Ruby Tuesdays, I'd have to drive an hour and a half, so making my own may be the only way I'll get to try it. Thanks for sharing the recipe. laurie
