Pink Power Popcorn

Today, I'll finish my last day of teaching for 2010. Wooohoooo! This should give me time for the really important things in life. You know... like blogging.

I'm not the only one finishing school this week. The daughters are finishing as well.  It's finals week at Mercer University this week.  In just a few days, they will be home as well, and all will be right in Debbie Land.

We always send the coeds a box of goodies to help get them through finals week. Here's some of it. You won't be surprised to learn that The Duchess adds to it as well. 


It generally includes some healthy snacks as well as some good old fashioned homemade comfort. The winter finals box always includes more homemade cocoa.


This year,
 I decided to add a little bit of whimsy to the box
 in the form of
 white chocolate peppermint popcorn,


Which I decided to name Pink Power Popcorn
for no good reason
other than that I like to name things.

I found the recipe last year and could hardly wait to try it this Christmas. It's simple, and both the daughters and the niece reported that it was delicious.  Good to know since it was easy too. Now, I'm going to make some to give as Christmas gifts and send them along with some peppermint cocoa.


I used 16 cups of popped popcorn.
This took three bags of microwave popcorn.

Crush 1/2 cup of peppermints.
 I used my coffee bean grinder.
You could just whack it by hand if you wanted.

Then melt 2 cups of white chocolate
chips in the microwave.

Pour the melted chocolate over the popcorn,
and sprinkle the crushed peppermint over it all.
Mix it together thoroughly in a huge bowl,
and spread it out on a piece of freezer paper.


See? It's pinkish.


Then bag it up in festive peppermint bags
with peppermint ribbon

and send it on to some favorite coeds.

That's it.
Now, I'm off to school.
After that, a DAR meeting...
I might need a little Pink Power myself
by the end of the day.

Wow, you get off early for Cmas! We always had to work till Cmas Eve! Enjoy your down time, this beautiful season, and your music! Loved the previous post too.
You are a good mom! I always loved those boxes from home. There weren't too many of them...I am the youngest of 4, and I guess it got old! :)

Happy Last Teaching Day!!!! I'm hoping your popcorn gave you the energy you needed. (Did you use sugar free peppermints for yours?) It sounds wonderful. I haven't sent my girl a finals package.....I just send texts! Can't wait to get them all HOME!!!!

This popcorn looks delicious. I have made the same kind minus the peppermint and we love it.

Sweet that you send the girls packages to help them finish up. You know that I will be remembering all these things you do for when mine are in college.

This looks so good ~ and it's cute, too! I will be done working for the year on Friday, and then I'm off until Jan. 4. I can hardly wait for the holiday break to begin so I can get on with more interesting things. LOL :)

Sounds like a winner to me! I saw a picture of peppermint-topped fudge brownies and they were excellent so I think I'm going to try Peppermint popcorn too! Love how you share your recipes with us.

Yup! I am making me some of that! This is such a fun idea and I think wacking the peppermints by hand is a good stress reliever. Cheaper than therapy! :-) Thanks for this great idea!

Celebrating with you on your last day of teaching! There's nothing like a break from normalcy! Popcorn and peppermint are two of my favorite things so I'm sure I'd love them together. Bet your daughter did too!!

Cute and delicious! I like that. I have a peppermint party coming up and that sounds like something the kids would like. It is a party for boys so I will have to call it peppermint popcorn!! No pink allowed!

Oh man, this popcorn looks DELICIOUS. I can almost taste it through the computer.

If I decide to try to make some of this - I'm going for the whacking-by-hand method. I'm just a "whacker yakker" at heart...

I sure hope those coeds know that everyone doesn't get "pink power popcorn," along with a myriad of goodies to help them through finals. My mom is the best, even perfection in my eyes, but she failed to make my dorm room a dream or send me finals week care packages! You are amazing and your popcorn divine...and ho ho ho, have a merry last school day, friend!

So happy your elder coed shared this treat with her cousin. She loved it. My package didn't have popcorn or cocoa (she got to share that too). I only hope mine shared her cookies and homemade soup. (I got up at 5:30 am to make the confounded soup).
