Sister Saturday Pumpkin Soup

It's time for Sister Saturday!

Super Sisters  Vanessa and Heather
 are throwing a soup party
and have invited folks to bring 
their best soup recipes
and come along.

I wanted to join the fun.





But which soup to bring?
Decisions, decisions…


Probably not what the sisters had in mind.

In truth, I didn't know what to bring. I thought about bringing chili, but honestly, there’s nothing at all special about my chili. I don’t even use dry beans. I thought of a few other soups too, but my soup making is mostly trial and error, emphasis on the error.   

So I decided to try a new recipe. See... the wonderful thing about a virtual pot luck is that it's visual.  Even if it actually tastes like rubber cement, no one is the wiser as long as it looks good. 

I can't possibly be the only one who thinks like that.

I decided to make pumpkin soup. Now, I've never made pumpkin soup before. In fact, I've never even eaten pumpkin soup before. I just had a notion that it would be an Octoberish thing to bring.

In level of  difficulty, it scores a “Debbie”. 

I just finished making it
and tasting it,
 and
It's good! 
 It’s great!
As in 
 I-can’t-believe-Debbie-made-this great...
Maybe this recipe thing is a good idea.

Coconut Pumpkin Soup with Curried Pecans

2T. EVOO
¼ cup chopped onions. I used sweet onions, of course.
3T. curry powder (reserve 1 tablespoon)
15 ounces pureed pumpkin
2 cups vegetable stock
3 T. pure maple syrup (reserve 1 tablespoon)
15 ounce can of coconut milk
¼ cup pecan halves
a dollop of whipping cream

So first….

Sautee the onions in the olive oil for 5 minutes
Whisk in
               2 T. curry powder
               Pumpkin
               Vegetable stock
               2 T. maple syrup
Simmer for 10 minutes.
Remove from heat.
Blend in food processor or blender
Return to the pot and add the coconut milk.
Simmer for about 10 more minutes.

Then...

Mix the remaining curry powder and maple syrup and coat the pecans. Toast coated pecans for 10 minutes at 375 degrees.

That's it. Seriously delicious.
Garnished with a little whipping cream and the pecans...

Curried Pumpkin Soup

Yep. That's exactly the kind of thing that happens to me at a real pot luck. The gourmet cook brings the same dish.  Now, I'll have to do that embarrassing shuffle to the car with my full pot of untouched soup.

Just another day in paradise...

Sounds delicious to me sister. I hope you save some for me to try a taste. Did the husband like it? Sounds like it's right up his alley with the pecans and maple syrup.

I have never had pumpkin soup either! Yours looks very good and I love pecans!! I had a happy accident today and made turnip soup. Yep. I bet no one is bringing that to the soup party! I was really just trying to make something low carb, so I sauteed onions in butter, added chicken broth then realized I had some turnips. So I cut one up in the broth and it was really good. If you like turnips!

Okay - it does look good - but I'm not to sure about it myself. I think it is a great idea to try new recipes though. Great idea.

I'd never heard of pumpkin soup until one of my friends mentioned today that she had a bowl of pumpkin soup and claimed it delicious...I have my reservations on that until I can try it myself. Good for you for trying a new recipe!

I have never had pumpkin soup either, but this sure does make me wanna try some! Definitely out of my comfort Zone! Rarely does what I cooked look what it's supposed to! Have a blessed weekend!!

That looks wonderful. I love pumpkin anything and I have never had pumpkin soup. I'll have to try it or maybe give the recipe to Beth to try. She gets in the mood to cook on occasion and this might be one she would like to do.

OK, I am not a big pumpkin fan (big as in ardent, avid, eager fan - not big as in huge or giant pumpkin - just had to clarify that...). But, I would visit Debbie Land just to taste that soup. Yes, I would. After all, I'm thinking it would have to taste better than that "kick the can" ice cream...just sayin'

I'm not a cook - homemade soup for me would be a bouillon cube and some water. OK, I'd throw in a carrot just for a little color. (Need that orange, after all). Mmmmm...mmmm...good.

Have I told you lately (ever) that I think you take the best photos? You do! They're very artistic...and I like them...very much!

Karen, good question! I would say that you definitely taste a hint of the curry. Considering how much curry you use, it's not over powering though. It's subtly sweet and pumpkiny but not as sweet as pumpkin pie.

You can't eat that much of it. I would think it would make a better first course soup than main course or meal.

Your soup looks divine and very gourmet. I can't even express how proud I am of you! I do think you need to take on a cooking challenge at least once a week. You have already mastered the table thing, I'm still swooning over your last chuck wagon affair. I'm going to make this soup on Monday...and it will rewarm, just gently. Don't get it simmering or it will stick! Bravo...

Debbie...you will think I am making this stuff up...but I was THIS close to taking a picture of Campbell's Tomato Soup and putting it up first!! We must all just have that slightly warped sense of humor! And, I have had many pumpkin soups but I have never had Coconut pumpkin soup with curried pecans so whose the gourmet now?? That sounds so delicious and I can't wait to try this version. Thank you so much for joining in the party! It sounds wonderful. No coconut milk round here. Pop grocer would say we don't milk coconuts in these parts....then laugh an git the LOOK like I'm nuts. Ya well. Great post!

Pumpkin soup sounds yummy, especially with coconut milk and the picture is sooo pretty so you're right. who cares what it tastes like. It sounds gourment to me!

Debbie - If you could please put that soup in a can for me, I think I can make it! :) Looks really yummy and I think you are very brave to try something new. And, of course, you had me laughing with your "embarrassing shuffle to the car with a full pot of untouched soup" - an image I can totally identify with since I have found myself doing that same shuffle at many a pot luck.
